Veggie Fried Rice Kick off the new week with this delicious dish. Full on hibachi flavor at home. If you ever have some leftover / extra cooked white rice, save this for later and fry this one out! This is a simple fried rice— that comes together super quickly for a great weeknight dinner. With scrambled eggs, loads of fresh scallions, roasted sesame seeds and of course crispy rice. This is great served with some teriyaki shrimp or chicken and vegetables.

– olive oil
– 1/2 cup frozen peas
– 1/2 cup onion diced
– 2-3 garlic cloves, pressed / minced
– 1 tbsp fresh ginger, pressed
– 2 eggs, scrambled
– 3 cups day old rice
– 2-3 tbsp butter
– 2 tsp sesame oil
– 3 tbsp soy sauce
– 1 tbsp toasted sesame seeds
– scallions
– salt and pepper to taste
– Chinese style hot mustard sauce for dipping

Heat a cast iron pan with some olive oil and 1 tbsp butter. Toss in your onions and peas and cook for 3-4 minutes until onions have softened. Add in your garlic and ginger and stir for a minute. Move ingredients to the side and crack two eggs into the pan. Scramble and add to the vegetable mixture. Add in your day old rice, 2-3 more tablespoons of butter and stir to combine. Add sesame oil, soy sauce and half of the sesame seeds. Combine well— cover the entirety of the pan with rice and cook for 3 minutes. Flip, add some olive oil, and press down to do the same. This will allow the rice to crisp up for that perfect texture. I add a little freshly ground black pepper. Salt if needed— but soy sauce should do the trick Top with toasted sesame seeds, loads of fresh scallion and serve with hot mustard. Delish!
