Tuscan Ravioli If you’re looking for a dish to wow guests or for a date night in — but you don’t want to be in the kitchen for hours — look no further! This dish is a winner. Four cheese ravioli with a sundried tomato oil and cream sauce, with sundried tomatoes, spinach and lots of cracked black pepper. And don’t forget to serve it up with some toasted up bread to soak up all the delicious sauce!

I used a 4 cheese ravioli but this would also be delicious with a spinach or chicken ravioli. I also kept this one but know this would be great with the addition of some sweet Italian sausage.

– 3 tbsp butter
– 5 cloves garlic, minced
– 1/2 tsp Italian seasoning
– 1/2 tsp paprika
– 1/2 tsp onion powder
– 2 tbsp fresh lemon juice
– 1/4 cup chicken stock
– 2 tbsp sun-dried tomato oil (from sun-dried tomato packed jar) + sun-dried tomatoes
– 1 cup heavy cream
– six leaves of basil, torn
– 8 oz package fresh spinach
– 20 oz package ravioli
– 1/4 freshly grated parm + more to top
– cracked black pepper

– boil a large pot of salted water
– in a separate pan, add butter. Once it begins to melt add the garlic and stir. After thirty seconds, add in your sun-dried tomato oil. Stir to combine. Add seasonings, lemon juice, chicken stock, sun-dried tomatoes (some cut, some whole), heavy cream and stir to combine. It should become a smooth, cohesive sauce. Add salt to taste.
– add ravioli to the boiling water. Once done, remove from water and add it into the sauce. Add 1/4 cup Parmesan cheese, spinach and some basil. Cover the pan for two minutes, then remove and stir to coat the pasta. Plate up and top with more fresh parm, black pepper and enjoy. Serves 4!
