The Ultimate Italian Sausage & Peppers Bake This really just tastes like home. Without the St. Ann’s festival this year in Hovokem, I was really missing out on my annual sausage and pepper sandwich. This dish totally hit the spot. With the addition of baby potatoes, this is really a complete meal.. and that oil for dipping bread . Great for cold weather. This is a great dish to make for multiple meals- day 1: bowl, day 2: sandwich, day 2: add some eggs and make a breakfast scramble!

Ingredients:
– 4 cups baby potatoes, halved
– 4 hot sausage links, 4 sweet sausage links, cut into thirds
– 1 large yellow onion, sliced
– 2 green + 2 red bell peppers, chopped
– 4 cloves garlic, roughly chopped
– 1 tbsp butter
– 1/2 cup chicken stock
– olive oil
– 1/2 tbsp Italian seasoning, 1/2 tsp paprika, 1/2 tsp black pepper, 1/2 tsp salt, 1/2 tsp garlic powder

– preheat oven to 400 degrees
– in a large bowl place potatoes, a little bit of olive oil, Italian seasoning, paprika, garlic powder, salt and pepper. Mix to combine. Heat some olive oil in a large pan and add the potatoes, chopped garlic and butter. Let those cook and soften (begin to brown) – 12-15 minutes. Remove and place in the bottom of a 9×13 baking dish.
– while the potatoes are cooking, add oil to a separate pan with onions. After three minutes add peppers, a dash of salt and pepper. Let cook together for 5 minutes and add to the baking dish with the potatoes.
– in the pan that cooked the potatoes, add your sausage and cook until browned (I like when the ends crisp up a bit!). Remove and add to the baking dish.
– add chicken stock, a splash of olive oil, salt and pepper to the dish and stir to combine. Cover and bake for 25 minutes. Remove foil and bake for another 15 minutes. Top with fresh parsley and serve with your favorite bread ️
