Sticky & spicy Halloumi tacos

Okay so this is definitely not my most impressive of meals but it was packed full of flavour. I would really recommend it when you’re in the mood for a quick & easy veggie meal that’s super flavoursome. The combo of spicy salsa, FRESH af pico de Yalla & tangy pickled onions was next levelllll.

So salty, so spicy, so tasty. Save this for the perfect summer lunch or dinner ️

– I love a mini corn tortilla, espicially flavoured ones. Try find a chilli and lime tortilla if you can or use mini ones!
– Quick pickle your onions by chopping red onion into small slices. Add to a jar with cider vinegar until it is covered & sprinkle in a pinch of brown sugar & of salt (channel your inner salt bae). Leave for 20 mins.
– Lightly batter your Halloumi. Use the top tier Halloumi if you can to make it extra tasty. Sprinkle some flour on both sides of the Halloumi (patting it dry with kitchen towel before doing so to help it stick better)
– Serve up your Halloumi hot in the wraps with your pickled onions & salsas of choice. I love using a chilli salsa with a zingy green salsa verde. Make a salsa verde by chucking tomatillos / green tomatoes, garlic, cilantro, lime juice & chopped white onions into a food processor.
– Alternatively, use chimichurri sauce. Chop a handful of parsley, half a red chilli & 4 cloves of garlic & add to a bowl. Mix in 1 tbsp red wine vinegar & 1.5 tbsp lemon juice. Gradually add olive oil until you get the chimichurri sauce to the consistency you like.
