Slow Cooked BBQ Pulled Chicken Sandwich with Crunchy Slaw Low and slow, baby. It’s football season so im constantly thinking about great tailgate foods, but that doesn’t mean they aren’t great meals for any night of the week. I love a slow cooker meal to just set and forget during the work day. Plus, it makes your house smell fantastic. Gimme bbq chicken any day and I’m a happy girl. This is simple, yet packed with flavor and texture. Pickles on the side are a must (as is the brioche bun!)

Ingredients:
– 3 large chicken breasts
– 1 small red onion, quartered
– 3 cloves garlic, whole
– 2 tbsp apple cider vinegar
– splash pickle juice
– 1/4 cup chicken stock
– 16 oz hickory bourbon bbq sauce
– tbsp honey
– 1-2 tbsp olive oil
– 1 tbsp brown sugar
– salt, pepper, smoked paprika, onion powder, dried thyme
– brioche buns

Cole slaw:
– mix green and purple cabbage + carrots (cole slaw blend)
– 1/2 cup Mayo
– celery salt, lots of fresh ground black pepper, salt, ground mustard powder
– tbsp apple cider vinegar
– juice from 1/2 lemon

In a crock pot place all ingredients for the bbq chicken and set on low for 7 hours. Make your cole slaw and place into the fridge for 1-2 hours. Remove chicken into a bowl and shred. Return to the crock pot for 5-7 minutes to soak up that delicious marinade. Build your sandwich, serve with pickles and enjoy!
