Shrimp Tacos with Pineapple and Charred Jalapeño Salsa & Garlic Crema You know I’m a huge fan of shrimp tacos, and these really took them to the next level. You’re going to want to save this for yourself next taco Tuesday! Sweetness from the pineapple, heat from the jalapeños, a bite from the garlicky sauce, and that delightful crunch from the cabbage makes this a dinner that is sure to make you happy! Shrimp is one of my favorite proteins because of how quickly they cook and how wonderfully they take on the flavors that you are cooking with! Definitely recommend charring your corn tortillas for some added flavor and finishing off with a fresh squeeze of lime. We use about three shrimp per taco!
– 18 shrimp, peeled and deveined (serves 2)
– homemade shrimp taco seasoning: salt, pepper, chili powder, garlic powder, onion powder, smoked paprika, ground ginger, dried thyme, cayenne – splash of olive oil
– olive oil
– 6 corn taco tortillas
Pineapple jalapeño salsa
– one cup diced pineapple
– 1 large jalapeño, roasted / charred
– 1/4 red onion, finely diced
– juice from 1/2 lime
– salt, pepper, parsley
Garlic Crema
– 1/2 cup sour cream
– 2 garlic cloves, pressed
– juice from 1 lime
– 2 scallions, Chopped
– salt, pepper, ginger powder
– 1 cup cabbage, finely sliced
Season your shrimp and let it marinate for 15 minutes. Now prepare your salsa and sauce. For the pineapple salsa, take your charred jalapeño (I did mine on stovetop flame) and cut to remove the seeds. Dice and throw into a bowl with the pineapple, red onion, lime juice, parsley — add salt and pep to taste. Now your crema — take all ingredients (sour cream, lime, pressed garlic, salt, pepper, ginger, scallions) into a bowl and stir until desired consistency. Heat some oil in a pan and once hot, cook tour shrimp 2 minutes per side or until completed. Then, heat your tortillas on the stovetop flame for a nice char. Toss cabbage with 2 tbsp of that garlic crema. To build your tacos- plate tortilla, cabbage mixed with crema, shrimp, pineapple salsa, top with more of that garlic crema and a squeeze of lime!
