Sausage & Sweet Potato Hash For all your weekend brunch inspo, look no further! This is a favorite in our house. The sweet potatoes, sausage onion and crispy potatoes work beautifully together, and the peppers and parsley give pops of freshness. Cooked together in a cast iron pan gives a nice crispy layer that we love in a hash. Top it with a fried egg to round out the dish and you have a completely addicting meal!
– 3 tbsp butter
– 1 large sweet potato, diced
– 1 large potato, diced
– 1 medium yellow onion, chopped
– 1 orange bell pepper, chopped
– 2 cloves garlic, minced
– 3 links sweet Italian sausage
– salt, pepper, dried thyme
– a couple leaves fresh sage, torn
– a handful of fresh parsley
– eggs
Heat a little oil in a cast iron pan. Add sausage- removed from casings. Brown and crumble in pan. Remove and set aside. Add a tsp butter and then your onions and peppers and cook for 3-4 minutes. Add garlic and cook for another minute. Remove from pan. Add your remaining butter and potatoes and sage, salt pepper and thyme. Cook together until they can be pierced easily with a fork. Add the sausage, peppers and onions back in. Combine and spread out to fill the base of the pan. Cook for 5 minutes together. Flip once and repeat until the top is cooked through and the bottom is crispy. In a separate pan, cook your eggs. Top with fresh parsley and eat while hot!
