Pistacchio e Salsiccia Pizza This pizza was inspired by a pizza I had years ago at in NYC. I had never had it before and i absolutely loved it. This pistachio and sausage pizza has such a unique flavor that is just amazing. The nutty rich pistachio “pesto” base layer marries beautifully with the sweet crumbled Italian sausage on top. You know I love a cast iron pizza moment— cooking the the sausage in the pan first coats the base in a nice oil that allows the crust to get that nice crispy bottom, and when you add some fresh mozzarella on top you just have the perfect pie. Filling, unique and delicious.

Ingredients:
– small pizza dough /> – 1/3 pound fresh mozzarella /> – 1.5 cups shelled pistachios, lightly toasted /> – 1/2 cup freshly grated /> – 1/2 cup extra virgin olive oil, plus more if needed (plus a dash of oil for cooking the sausage)
– handful fresh basil leaves
– 3 pieces crumbled sweet Italian sausage, out of the casing
– salt

– take your pistachios, 1/2 cups olive oil and parm and blend together until a smooth sauce / pesto forms. Add oil as needed to get to desired consistency.

Preheat oven to 475. Heat a dash of olive oil in yoir cast iron pan. Add sausage, removed from casings, and cook until brown, making sure to break down the pieces into small crumbles as it cooks. Remove from pan.

Place the pan into the oven for five minutes to get it hot. Remove and work your pizza dough in the pan to form a pizza, forming a slight crust as you move it towards the edges. Paint slightly with some olive oil and cook in the oven for 5 more minutes. Remove and build your pie.

Layer of pistachio pesto. Crumbled sausage. Then basil leaves, and finally top with your fresh mozz. Brush the crust edges with some olive oil. Bake on top rack 12-15 minutes or until crispy golden brown and the cheese begins to brown/bubble. Serve with your favorite red wine and enjoy!
