Nothing says S U M M E R T I M E ️ more than a Low Country Boil. Growing up with half of my family living on the water in Coastal Georgia this meal is one that I’m extremely familiar with, and crave during the summer months.
There are plenty of variations of this meal however, my quick easy go to is always:
• 5 parts shrimp (okay maybe thats excessive but for my husband and I, we use 2lbs of shrimp, our shrimp is always from the GA Coast – whenever we visit we always leave with a ton of shrimp – how can you not!? ️)
• 5-10 red potatoes
• A few ears of corn
• 1lb of kielbasa • 3+ lemons
• OLD BAY (I never measure, as long as the smell of the spices are aromatic to my liking I’m good!) The most common way to make this meal is a stockpot, however.. sometimes we’ll foil pack the ingredients and grill! (They all turn out equally delicious.)

If using the stockpot, you’ll want to add your spices & lemon, then start your potatoes and corn first, then add the kielbasa.. once the potatoes are tender turn the burner off toss in your shrimp until they’re beautiful and pink! I melt butter for the potatoes & corn and always always always cocktail sauce for the shrimp.

Toss on the table and devour. We forego most table manners for this meal.. a cold beverage accompanies nicely as well . .
On another note.. I’ve been known to use my leftovers from this meal to make a mashed potato style shrimp and ‘grits’ aka old bay mashed potatoes.. two meals in one. Ain’t mad about it!
