Lobster Pappardelle in a Saffron Cream Sauce In a word, dreamy. You’re going to want to save this one! I love the combination of seafood & saffron & this was perfection!

If you have some time & really want to wow your dinner guests, this is the dish. With homemade lobster stock, beautiful chunks of steamed lobster, al dente ribbons of pappardelle & a luscious, creamy sauce with saffron infused white wine- it delivers on all the goods!

Ingredients:
– 24 oz of lobster tails, steamed and chopped
– 2 tbsp butter
– 3 cloves garlic, minced
– 2 tbsp tomato paste
– dash red chili flakes
– 6 oz white wine
– 1 tsp saffron threads
– 1 cup lobster stock
– 1 cup heavy cream
– 1/2 cup cherry tomatoes,halved
– 1 tsp butter
– 1 tbsp chives
– 16 oz pappardelle
– 1/4 cup reserved pasta water
– 1 tsp salt
– chives, parsley, and black pepper to top

Lobster stock:
– shells from 24 oz lobster tails
– one large onion, halved
– 2 stalks celery
– carrot
– 3 cloves garlic
– tarragon, thyme, 3 fresh bay leaves
– tbsp olive oil
– 1/4 cup white wine
Cover everything with water and bring to a boil. Reduce to a simmer and cook for 1.5 hours. Drain through a strainer for smooth stock, set aside.

Place saffron into white wine & set aside for 1 hour to infuse. Steam your lobster until meat is opaque & the shells turn a bright red. Remove the lobster meat from the tails and chop. I like to leave them in larger chunks! Cover & refrigerate. Make your lobster stock.

Bring a large pot of salted water to a boil. Cook your pappardelle until al dente. Reserve some pasta water (1/2 cup or so) then drain your pasta. Toss with olive oil & set aside.

In a sauce pan, heat butter- add shallots & cook for a minute. Add garlic & chili flakes & cook for another. Add tomato paste & cook 3-4 mins. Add your white wine/saffron, stir to combine & cook for 5 mins. Add stock and bring to a boil- let this cook until reduced by half. Add cream & cook for another five mins. Add tomatoes, chives, s & p to taste, tsp butter and cook for another 3-5 minutes on low. Add chopped lobster and stir. Add pasta, 1/4 cup pasta water, combine & cook for 1 min. Plate-top with chives, parsley, pepper
