Lemon Garlic Butter Italian Seasoned Thighs A great weeknight staple to add to your rotation! Juicy boneless, skinless thighs pack a full punch of flavors with this method! A heavy coating of Italian seasoning acts as a “crust” to the meat here. We make chicken thighs about once a week over here and this “Italian seasoning” method is one of our favorites… this time tried some new things with the “sauce” prep and it turned out stellar! Who doesn’t love lemons, garlic and butter?? The shallots crisped up in the oven and added a great layer or flavor and texture as well.
– 1 pkg boneless, skinless chicken thighs
– olive oil
– Italian seasoning, paprika, salt and pepper
– 1 shallot, sliced thinly
– juice from 1 lemon, plus 1 lemon to bake (halved)
– 3 tbsp butter
– 4 cloves garlic, minced
– Rosemary sprigs
Preheat oven to 400. Pat chicken dry and season well with salt pepper and a little paprika on both sides. Then, with a heavy hand, take Italian seasoning and press into the meat to “coat”. Heat olive oil in the cast iron pan. Once hot (medium high heat), place chicken into the pan to brown and crisp up (4-5 minutes per side). While chicken is cooking, place butter and minced garlic into a small bowl and melt in microwave. Add juice from one lemon to this mixture and stir. Once chicken is browned on both sides, remove from heat and add sliced shallots and the garlic, lemon, butter mixture into the pan, making sure to spoon some over the chicken. Add a few sprigs of rosemary and a lemon, halved into the pan and throw it into the oven to finish baking for 20 minutes. Once removed, you’ll have crispy, juicy chicken, some extra buttery garlic goodness to spoon over top and some roasted lemon to squeeze. Great with some Cous cous and veggies!
