Happy Friday-Eve!.. This Friday is looking super sweet because out new family of 3 is taking a little family date night… and by date night when you have a little one this small this means an early dinner out so momma can enjoy a glass of wine and a nice meal that someone else cooks for her on a patio somewhere . (And still be home so I can have my PJs on before 8pm – HA!)
Anywho.. this KOREAN CAULIFLOWER BEEF BOWL.
This was my first time making this, I used the recipe for a reference but then made it my own. The day before I also ‘pickled’ some thinly sliced cucumber & carrots using a mason jar, sugar, and white vinegar – easy and a great addition to the meal!
WHAT YOU’LL NEED:
1lb ground beef
1/2 onion chopped
4 green onions chopped
2 tbs Gochujang Sauce (this is was found on the international aisle at the store – usually I’m not one for splurging on one ingredient – it was only $2.99 and came with so much I’ll be using it until it expires)
2 cloves garlic
2tsp fresh ginger
1 tbs brown sugar
In a bowl mix 2 tbs water with your brown sugar and 1 tbs olive oil. Sauté your ground beef until almost cooked through, then toss in your onion, garlic, and ginger. Cook for 2 minutes. Toss in the water & brown sugar mixture, let simmer for 10 min. Mix in your Gochujang Sauce – use as much as you like for taste. Then put in on white rice, cauliflower rice.. whatever you like and add toppings. I used cauliflower rice topped with pickled cucumber & carrot, jalapeño, green onions, and the smallest amount of cilantro. I pulled everything together with sriracha mayo – one of my faves! This took all of maybe 30 minutes and the flavors were unreal! A hit in our household!
