Cinnamon Banana Muffins These pass the taste test x100. Perfect little muffins to have for breakfast with your morning coffee, made with healthy ingredients and topped with a little extra love in the form of a ‘streusel’. Connor says these are his favorite muffins I’ve made yet!

These healthier muffins are made with maple syrup, almond flour, and olive oil. The banana flavor really is the star here. The bananas also help to keep them moist. It’s hard to eat just one!

Ingredients:
Muffins:
– 4 mashed ripe bananas
– 2 eggs
– 2/3 cup maple syrup
– 1/2 cup olive oil
– 2 cups almond flour
– 1 tsp baking soda
– 1 tsp salt
– 1 tsp cinnamon
– 1.5 tsp vanilla extract

Cinnamon streusel
– 3/4 cup almond flour
– 1 tbsp maple syrup
– 1 tbsp olive oil
– 1 tsp cinnamon

Preheat oven to 350. Lime muffin tin, or use non-stick muffin tin and “grease” with a little olive oil.

Streusel
– take almond flour, maple syrup, cinnamon and olive oil in a bowl. Whisk to combine. Place in refrigerator for 5-10 mins while you make muffins.

Muffins:
– in a large bowl mix bananas, eggs, vanilla and maple syrup. Add almond flour, baking soda, salt, and olive oil. Fold these into the mixture until combined. Fill each muffin tin 3/4. Top each with the streusel mixture.

Bake for 25 minutes or until golden brown. Remove to a cooling rack. Enjoy!
